Crazy Easy Vanilla Cake

You aren’t going to believe how easy this recipe is! 4 ingredients…. 1 bowl…. that’s it! The end result is a soft and fluffy vanilla cake. It’s not too sweet with a nice subtle vanilla flavour, perfect for customising with other flavours through icings and fillings. So far I’ve used this recipe for gorgeous little cupcakes with vanilla buttercream icing  and a layered cake with chocolate buttercream filling and icing.

The secret to this cake is the condensed milk. Mum always says any cake made with yoghurt, buttermilk or condensed milk will stay soft and moist, and she’s right! You can’t go wrong with this one guys! I promise.

It almost feels like this recipe is too easy to need to put up the step by step instructions, but I did anyway… if for no other reason that to prove just how simple it really is. Grab a large bowl, sift the flour into it, add the water, condensed milk and melted butter. Then grab a whisk and stir away. Leave for a few minutes and the mixture will thicken slightly. Give it another quick stir with the whisk, then pour into a greased and lined cake tin, or if making cupcakes, spoon mixture into lined cupcake trays. You will need to fill the cupcake liners about 3/4 full.

Crazy Easy Vanilla Cake

Serves 12-15 cupcakes
Soft and fluffy cupcakes with only 4 ingredients and 1 bowl. Too easy!


  • 1 can Condensed Milk (395g)
  • 2 1/4 cups Self Raising Flour (sifted)
  • 1 cup Water
  • 125g Butter (melted)


Preheat oven to 180 degrees C.

Place all ingredients in a large bowl and whisk until the mixture comes together. Leave mixture to sit for a couple minutes, until it thickens slightly. Stir again then pour into greased and lined cake tin or spoon into a lined cupcake tray.

Bake for 40 minutes for a cake, 20 minutes for cupcakes and 10 minutes for mini cupcakes

Vanilla Buttercream

Prep time 10 minutes


  • 250g butter (softened)
  • 4 cups icing sugar
  • 3 tablespoons milk
  • 2 teaspoons vanilla essence


Spiced Buttercream Variation - Add 5 teaspoons mixed spice with the vanilla essence.

Lemon Buttercream Variation - Add lemon rind and 2 tablespoons of lemon juice and pinch of salt. If required, add extra icing sugar to thicken mixture again.


Beat butter until very pale. Add icing sugar, milk and vanilla and continue to beat. Adjust if necessary with a little extra milk or sugar until a thick, fluffy but pipe-able consistency is reached.
