You aren’t going to believe how easy this recipe is! 4 ingredients…. 1 bowl…. that’s it! The end result is a soft and fluffy vanilla cake. It’s not too sweet with a nice subtle vanilla flavour, perfect for customising with other flavours through icings and fillings. So far I’ve used this recipe for gorgeous little cupcakes with vanilla buttercream icing and a layered cake with chocolate buttercream filling and icing.
The secret to this cake is the condensed milk. Mum always says any cake made with yoghurt, buttermilk or condensed milk will stay soft and moist, and she’s right! You can’t go wrong with this one guys! I promise.
It almost feels like this recipe is too easy to need to put up the step by step instructions, but I did anyway… if for no other reason that to prove just how simple it really is. Grab a large bowl, sift the flour into it, add the water, condensed milk and melted butter. Then grab a whisk and stir away. Leave for a few minutes and the mixture will thicken slightly. Give it another quick stir with the whisk, then pour into a greased and lined cake tin, or if making cupcakes, spoon mixture into lined cupcake trays. You will need to fill the cupcake liners about 3/4 full.
