Monkey Delight Biscuits
One of our favourite and most highly anticipated activities in our recent Thailand holiday, was a visit to see the monkeys. There are lots of locations around Thailand where you can see them, but since we were in the north we visited the Monkey and Fish Cave, Wat Thampla near Chiang Rai. I’m not really sure why the fish get mentioned in the name, I mean, sure… there are fish there but compared to the monkeys, they hardly got a glance from us. I’ve seen a few monkeys in zoos before, but this was such a treat to get to see them without a cage and to get to interact with them a little.
These mischievous little creatures were running along rooftops, jumping from branch to branch and scurrying up to people to grab bananas. Well most of them were, there were a couple of grumpy ones… but then maybe they just don’t like early mornings.
I was looking through all of Grandma’s recipes and came across some biscuits called Monkey Delights and thinking back to our lovely visit to see the monkeys, I decided I just had to make these. Now I’m not sure if monkeys would take delight in eating these bikkies, as all I’ve seen them eat are bananas, but they are certainly a delicious treat. Chocolate cookies, full of coconut and nuts, they are very very moreish. Even more so if you top them with chocolate icing and sprinkle with coconut.
Start by adding all the dry ingredients, including the chopped nuts, to a bowl. Melt the butter and allow to cool. Add egg to butter and beat well. Pour into the dry ingredients and mix together. While this recipe is simple to put together, the mixture ends up a little crumbly, making it a bit tricky to form the balls, but persevere and it will work. However, if it really isn’t staying together, just add a touch of water to the mix. Form into balls and press onto a lined baking tray. Bake for approx. 12-15 minutes or until starting to brown. Leave to cool on the tray. If you wish to ice the biscuits, mix together icing sugar, cocoa, butter and boiling water and then spread on biscuits and sprinkle with coconut.
- 1 cup Self Raising Flour
- 1 cup Coconut
- 1 cup Chopped Nuts
- 1 cup Sugar
- 2 tablespoons Cocoa
- 1/4 cup melted Butter
- 1 Egg
- 1 teaspoon Vanilla
- Preheat oven to 180 degrees C.
- Combine dry ingredients in a large bowl. Add melted butter, vanilla and well beaten egg. Combine well and roll into balls. Place onto a lined baking tray and bake for 15 minutes or until lightly browned. Allow to cool on the tray.
- Once cool, top with chocolate icing and coconut, if desired.
