Chocolate Mint Wafers

A few months ago I revealed that I didn’t like eggs. Well, now you all get to hear about something else I don’t like…. peppermint. Yeah I know it’s a little weird. It’s also annoying. Everything tastes like mint… ok well not everything but some very important things, like toothpaste do. For a while I convinced Mum to buy me strawberry flavoured toothpaste when I was growing up, but in the end I just had to get over it and put up with the mintyness…. twice a day. Everyday. Urgh.

Everyone (except me) seems to love mint flavoured goodies however, so I thought I better include some here. My husband has really enjoyed being my taste tester too I think.

I’ve been told these are really very tasty and I can attest that the biscuit on its own is. These soft brownie-like chocolate biscuits are sandwiched together with a mint cream filling.  And if there is someone else out there like me, don’t discount these altogether. They would be really yummy with a vanilla filling… just replace the peppermint essence with vanilla.

The biscuits are made by creaming butter and sugar until fluffy. Add an egg and beat.

Add in the sifted flour, salt and cocoa alternately with the milk. It will take a bit of working the mixture to get it to come together. Using your hands will help. Don’t be tempted to add extra liquid, I promise it will come together eventually.

Roll small balls of the mixture and place on a tray. Press down with a fork or your fingers depending on whether you want a stripes or flat look. Bake for about 8 minutes.

Make the filling by simply mixing together the sifted icing sugar, cream, salt and peppermint essence

Once the biscuits have cooled, you can spread a little filling on a biscuit, then press a second biscuit on top.

Ingredients

Biscuit

  • 1 3/4 cup Self Raising Flour
  • 1/4 teaspoon Salt
  • 1 tablespoon Cocoa
  • 1/4 cup Milk
  • 125g Butter (Softened)
  • 3/4 cups Sugar
  • 1 Egg
  • 1 teaspoon Vanilla essence

Filling

  • 1/4 cup Cream
  • 1/8 teaspoon Salt
  • 1/4 teaspoon Peppermint essence
  • 2 cups Icing Sugar

Directions

Biscuit
Cream butter and sugar. Add egg and beat thoroughly.
Sift flour, salt and cocoa together. Mix flour mixture into butter alternately with milk and vanilla. Continue to mix until it comes together.
Roll teaspoonfuls of mixture and place on lined baking tray. Press with fingers or fork to flatten. Bake in a moderate oven (180 degrees C) for 8 minutes. Cool.
Filling
Mix together cream, salt, peppermint essence and sifted icing sugar until smooth. A little green food colouring may be added if desired.
Assembly
Spread a little filling onto a biscuit and then press a second biscuit on top.
