Homemade Lemonade
It has felt like summer has arrived early in Brisbane the last few days, we’ve even had the fan on in the bedroom at night. While I’m not a fan of that extremely hot middle-of-summer weather, I do love it when the days start to get longer and the jumpers can come off. A change in the weather like that also makes you want different food…. cool and light things like salads and refreshing drinks like this delightful homemade lemonade.
This lemonade is made on water, so it doesn’t have the fizz of commercial lemonade but it makes up for that in its taste. It’s sweet yet has a distinct lemon flavour and a slight tartness and because it is based on water, it is actually very refreshing. I won’t go so far as to say it’s good for you though; not with all the sugar. It is however a lovely treat for a hot day… or as I discovered, a great mixer for your favourite spirit. Malibu is particularly yummy in it.
And it’s dead easy to make. You need 6 lemons (medium sized ones), some sugar and water… and that’s it! Start by peeling the zest off the lemons and placing it in a bowl with the sugar and then pouring over the boiling water.
Stir the mixture until all the sugar has dissolved and then just squeeze the juice of the lemons into the bowl as well. At this point you can then taste the mixture and depending on your tastes, can add a little extra sugar or lemon juice. The mixture is then left to cool, before you strain it into a bottle and refrigerate until chilled.

Ingredients
- 6 Medium Lemons
- 12 tablespoons Sugar
- 6 cups Boiling Water
Directions
| Place zest peels and sugar into large bowl. Cover with boiling water and stir until sugar is dissolved. Add juice of lemons and stir to combine. Leave to cool. | |
| Strain into bottles and refrigerate until chilled. | |

Or if you *do* want it fizzy… insert soda water! 😛
(and if you make it on the stove instead, you can candy those lemon rinds for an extra treat)

Hi Chris, I did consider soda water, but wasn’t sure if it would lose its bubbles after boiling it. I guess you could use half boiled normal water to dissolve the sugar and then once that’s cooled, add the remaining amount in soda water. Good idea on the reuse for the lemon peels!
