Cheese and Bacon Stuffed Loaf

Is there a better combination than cheese and bacon? Actually is there a better ingredient than bacon? I swear, you add a bit of bacon to a recipe and instantly it becomes ten times better… yep instant awesomeness with just one ingredient! The inclusion of bacon in this cheesy stuffed bread made it an irresistible recipe for me and I just had to try it… had to! Of course, I made a few little changes but essentially this is a pimped up garlic bread.

It’s garlicky, cheesy, bacon-y, mustard-y… hmmm…  it seems my favourite descriptors at the moment end in y. This is a great recipe to take along to a BBQ, or a picnic. It’s really yummy warm, but just as good cold. You can also serve it as a light lunch or dinner… just add a salad (that’s what the original recipe from Grandma’s collection suggests).

This is so easy. You just need to cut the loaf of bread into thick slices, almost all the way through, but leaving the bottom crust intact. Saute the bacon and shallots and then mix them together with the other ingredients. Add the Tabasco to taste.

Cheese and Bacon Loaf StepsSpread the mixture into the slice, trying to make sure it is even and all the way through to the bottom. Divide the extra cheese between the tops of the slices. Wrap loaf in aluminium foil and bake for around 20 minutes. Take off the foil and continue to bake for another 5 minutes or until browned.

Crunchy bread with a cheesy bacon filling.

Ingredients

  • 1 Loaf of Bread (unsliced)
  • 120g Cheese (Grated)
  • 50g Parmesan Cheese (Grated)
  • 2 teaspoons Crushed Garlic
  • 1 teaspoon Multigrain Mustard
  • 120g Butter
  • 250g Bacon (diced)
  • 2 Shallots (sliced finely)
  • Tabasco

Extra

  • 80g Cheese (Grated)

Directions

Preheat oven to 180 degrees C.
Cut bread into thick slices, leaving the base of the loaf uncut to hold it together.
Saute bacon and shallots. Once bacon is cooked, mix all other ingredients, except the extra cheese, together and then spread evenly in all the slices in the bread.
Divide extra cheese evenly between tops of slices. wrap loaf in aluminium foil and bake for 20 minutes. Remove foil and return to oven for 5 minutes, or until browned.
